Welcome to my Day 56 P90X Results. Below are the measurements.

As you can see I have lost 12 lbs and 3 inches in this phase of my P90X results.

I  just started on the last Phase and I’m pushing it harder than ever to try and get the best P90X results I can for this last 28 days.

1 ½ Cups Chicken Broth
1 Medium Garlic Clove
½ Medium Onion Chopped
2 Carrots Sliced
1 Celery Stalk Chopped
2 tbsp.  Olive Oil
2 tbsp. butter
2 tbsp. Lime Juice
1 Cup Raisins
½ tsp. Cinnamon
½ tsp. Ginger
1 dash salt
1 dash pepper
¼ tsp. nutmeg
¼ cup couscous

Combine 1 tbsp. Lime Juice, ¼ tsp. Cinnamon, Ginger, Salt and Pepper add chicken and marinade for at least 15 minutes.

In frying pan add oil and chicken cook on medium heat for 5 minutes turning once.  Reduce heat add garlic and onion. Sauté until onions and garlic are brown then add ½ cup of chicken broth and 1 tbsp. Lime Juice stir to loosen pan drippings. Raise heat to medium add carrots and bring to a boil. Reduce heat cover and simmer for 20 minutes.

In a sauce pan add remaining cup of chicken broth, raisins, butter, ¼ tsp. Cinnamon, and nutmeg. Once chicken is done simmering for 20 minutes add celery to the frying pan cover and simmer another 5 minutes. Now bring ingredients in the sauce pan to a boil. Wait 2 minutes then add couscous. Cover and remove from heat. Let sit 5 minutes.

Put Chicken on a plate and cover with couscous mixture.

1/4 cup low-fat Parmesan cheese
1/2 tsp. dried basil
1/2 tsp. lemon pepper
1/4 tsp. garlic powder
Fresh parsley, minced
Sprinkle paprika
1/2 tsp. salt (optional)

Preheat a large nonstick skillet. In a small bowl, combine basil, lemon pepper, garlic powder, and salt (if using). Sprinkle onto both sides of fish and cook for five minutes, turning once. Sprinkle fillets with cheese, parsley, and paprika, and cover pan. Cook for another five minutes or until the fish flakes when lifted with a fork. Serve immediately. Serves 4.
